Ingredients
- 4 large portobello mushrooms, stems removed
- 1 cup cooked quinoa
- 1 cup spinach, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup feta or nutritional yeast
- 2 garlic cloves, minced
- Olive oil, oregano, balsamic vinegar, salt, pepper
- Fresh basil
Instructions
- 1Preheat oven to 400°F (205°C). Brush mushrooms with oil and place on baking sheet.
- 2Mix quinoa, spinach, tomatoes, garlic, herbs, and cheese. Stuff into mushroom caps. Drizzle with balsamic.
- 3Bake 25-30 minutes until mushrooms are tender. Garnish with basil. Serve as main or side.
