Ingredients
- 1 lb fresh spinach, wilted and chopped
- 8 oz mushrooms, sliced
- 1 onion, diced
- 3 garlic cloves, minced
- 8 oz feta cheese, crumbled
- 2 eggs, lightly beaten
- 1/2 cup ricotta or Greek yogurt
- 1/4 cup fresh dill and parsley
- 12-16 sheets phyllo dough, thawed
- 1/3 cup olive oil or melted butter
- Salt, pepper, nutmeg
Instructions
- 1Sauté onion and mushrooms until golden. Add garlic and spinach; cook until moisture evaporates. Cool slightly.
- 2Mix spinach-mushroom mixture with feta, eggs, ricotta, herbs, and seasoning.
- 3Layer 6-8 phyllo sheets in oiled baking dish, brushing each with oil. Spread filling, top with remaining phyllo sheets. Tuck edges, score top. Bake at 375°F (190°C) for 40-45 minutes until golden. Cool 10 minutes before slicing.
