Baked Lentil Stuffed Bell Peppers (Mediterranean) — a healthy halal vegetarian recipe with 290 calories and 13g protein per serving.
Ingredients
- 6 bell peppers, tops removed and seeded
- 1 ½ cups cooked brown lentils
- 1 cup cooked quinoa or rice
- 1 onion, diced
- 2 tomatoes, chopped
- 2 garlic cloves, minced
- Olive oil, oregano, cumin, parsley, feta or nutritional yeast
Instructions
- 1Sauté onion, garlic, tomatoes. Mix with lentils, quinoa, herbs, and seasoning.
- 2Stuff peppers and place in baking dish with a little water at bottom. Drizzle oil and top with cheese.
- 3Cover and bake at 375°F (190°C) for 30 minutes, then uncovered 15 minutes until peppers are soft.
