Ingredients
  • 6 bell peppers, tops removed and seeded
  • 1 ½ cups cooked brown lentils
  • 1 cup cooked quinoa or rice
  • 1 onion, diced
  • 2 tomatoes, chopped

  • Olive oil, oregano, cumin, parsley, feta or nutritional yeast
Instructions
  1. 1Sauté onion, garlic, tomatoes. Mix with lentils, quinoa, herbs, and seasoning.
