Baked Lentil Kibbeh with Caramelized Onion — a healthy halal vegetarian recipe with 260 calories and 12g protein per serving.

Ingredients
  • 1 ½ cups red lentils, cooked and drained
  • 1 cup fine bulgur, soaked
  • 1 large onion, finely chopped
  • 1/4 cup olive oil
  • 2 tsp cumin, 1 tsp allspice
  • Salt, pepper, fresh mint and parsley
  • 3-4 onions, thinly sliced for caramelizing
Instructions
  1. 1Mix cooked lentils, soaked bulgur, chopped onion, spices, herbs, and 2 tbsp oil. Knead into dough-like consistency.
  2. 2Press mixture into oiled baking dish. Score diamond pattern. Drizzle with remaining oil.
  3. 3Bake at 400°F (205°C) for 35-40 minutes. Meanwhile caramelize sliced onions slowly. Top kibbeh with caramelized onions before serving. Cut into pieces.
