Baked Lentil Kibbeh with Caramelized Onion — a healthy halal vegetarian recipe with 260 calories and 12g protein per serving.
Ingredients
- 1 ½ cups red lentils, cooked and drained
- 1 cup fine bulgur, soaked
- 1 large onion, finely chopped
- 1/4 cup olive oil
- 2 tsp cumin, 1 tsp allspice
- Salt, pepper, fresh mint and parsley
- 3-4 onions, thinly sliced for caramelizing
Instructions
- 1Mix cooked lentils, soaked bulgur, chopped onion, spices, herbs, and 2 tbsp oil. Knead into dough-like consistency.
- 2Press mixture into oiled baking dish. Score diamond pattern. Drizzle with remaining oil.
- 3Bake at 400°F (205°C) for 35-40 minutes. Meanwhile caramelize sliced onions slowly. Top kibbeh with caramelized onions before serving. Cut into pieces.
