Ingredients
  • 14 oz halloumi (halal), cubed
  • 1 zucchini, 1 eggplant, 2 bell peppers, 1 red onion (chunked)
  • 2 cups cherry tomatoes
  • 3 tbsp olive oil, 2 tsp oregano, 1 tsp garlic powder, salt & pepper
  • Fresh basil or parsley
Instructions
  1. 1Preheat oven 425°F. Toss vegetables with 2 tbsp oil and seasoning on a large sheet pan.
