Ingredients
- 14 oz halloumi (halal), cubed
- 1 zucchini, 1 eggplant, 2 bell peppers, 1 red onion (chunked)
- 2 cups cherry tomatoes
- 3 tbsp olive oil, 2 tsp oregano, 1 tsp garlic powder, salt & pepper
- Fresh basil or parsley
Instructions
- 1Preheat oven 425°F. Toss vegetables with 2 tbsp oil and seasoning on a large sheet pan.
- 2Roast 20 min. Add halloumi cubes and remaining oil.
- 3Bake another 12-15 min until halloumi is golden and vegetables are tender.
- 4Garnish with fresh herbs. Serve with couscous or bread.
