Ingredients
- 2 (15 oz) cans chickpeas, drained
- 1 carrot, grated
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1/2 cup rolled oats or breadcrumbs
- 1/4 cup fresh parsley, chopped
- 2 tsp Italian seasoning
- 1 tbsp tomato paste
- Salt, pepper, olive oil spray
- 2-3 cups marinara sauce
Instructions
- 1Preheat oven to 400°F (205°C). Pulse chickpeas in food processor until crumbly (not paste). Mix with carrot, onion, garlic, oats, parsley, seasoning, and tomato paste.
- 2Form into 18-20 balls. Place on lined baking sheet, spray with oil. Bake 25-30 minutes until firm and golden.
- 3Warm marinara sauce. Add baked meatballs and simmer 5 minutes. Serve over pasta, zucchini noodles, or in subs.
