Ingredients
  • 2 (15 oz) cans chickpeas, drained
  • 1 carrot, grated
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup rolled oats or breadcrumbs

  • 2 tsp Italian seasoning
  • 1 tbsp tomato paste
  • Salt, pepper, olive oil spray

Instructions
  1. 1Preheat oven to 400°F (205°C). Pulse chickpeas in food processor until crumbly (not paste). Mix with carrot, onion, garlic, oats, parsley, seasoning, and tomato paste.
  2. 2Form into 18-20 balls. Place on lined baking sheet, spray with oil. Bake 25-30 minutes until firm and golden.
