Baked Cauliflower and Potato Curry Puffs — a healthy halal vegetarian recipe with 340 calories and 8g protein per serving.
Ingredients
- 1 small cauliflower, finely chopped
- 2 potatoes, boiled and mashed
- 1 onion, finely chopped
- 1 tsp each cumin, turmeric, garam masala
- 1 green chili, minced (optional)
- 2 tbsp cilantro, chopped
- 1 package puff pastry sheets, thawed
- 1 egg or milk for wash
- Salt, oil
Instructions
- 1Sauté onion, add spices, cauliflower, and a splash of water. Cook until tender. Mix with mashed potato and cilantro. Cool.
- 2Cut puff pastry into squares. Fill with mixture, fold into triangles or rectangles, seal edges, and brush with egg wash.
- 3Bake at 400°F (205°C) for 25-30 minutes until puffed and golden. Serve warm with chutney or yogurt.
