Ingredients
- 2 (15 oz) cans chickpeas, drained (or 1 cup dried, soaked overnight)
- 1 small onion, chopped
- 4 garlic cloves
- 1/2 cup fresh parsley and cilantro
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp baking powder
- 3-4 tbsp chickpea flour
- Salt, black pepper, olive oil spray
Instructions
- 1Pulse chickpeas, onion, garlic, herbs, and spices in food processor until coarse texture (not paste). Mix in baking powder, flour, salt. Chill 10 minutes.
- 2Form into 12-15 balls or patties. Spray with olive oil.
- 3Air fry at 375°F (190°C) for 12-15 minutes, flipping halfway, until golden and crispy. Serve in pita with tahini sauce, veggies, and pickles.
