Ingredients
- 1 large eggplant, sliced ½-inch thick
- 1 cup marinara sauce
- 1 cup shredded mozzarella
- 1/2 cup grated parmesan
- 1 cup breadcrumbs
- 2 eggs, beaten

Instructions
- 1Dip eggplant slices in egg then seasoned breadcrumbs. Spray both sides with oil.
- 2Air fry at 380°F (193°C) for 12-15 minutes, flipping halfway.
