Ingredients
- 3 cups cauliflower rice
- 4 eggs, beaten
- ½ cup mixed veggies (peas, carrots, corn – optional)
- 2 green onions, chopped
- 1 tbsp low-sodium soy sauce or tamari

- 1 tsp garlic powder
- Salt & pepper

Instructions
- 1 Preheat air fryer to 375°F (190°C).
- 2 Mix all ingredients in a bowl.
