Ingredients
- 1 lb fresh spinach, chopped
- 1 large onion, diced
- 4 garlic cloves, minced
- ½ cup short-grain rice or vermicelli
- 6 cups vegetable broth

- 1 tsp cumin, salt & black pepper
- Fresh cilantro or parsley
Instructions
- 1Heat olive oil in a pot. Sauté onion until soft, add garlic and cumin.

- 3Stir in chopped spinach and cook 5 min until wilted.
- 4Add lemon juice, salt, and pepper. Simmer 2–3 min more. Garnish with herbs. Serve hot.
