Indian Style Vegetable Pulao (Easy Weeknight) — a healthy halal vegetarian recipe with 340 calories and 7g protein per serving.
Ingredients
- 1½ cups basmati rice, rinsed
- 1 potato, 1 carrot, ½ cup peas, 1 bell pepper (chopped)
- 1 onion, sliced
- 1 tsp cumin seeds, 1 bay leaf, 4–5 cloves, 1 cinnamon stick
- 2 tbsp ghee or oil, salt, fresh mint and cilantro
Instructions
- 1Heat ghee, sauté onion until golden. Add whole spices and vegetables; stir 3–4 min.
- 2Add rice and sauté 2 min. Pour in 3 cups water and salt.
- 3Bring to boil, then cover and cook on low 15–18 min until rice is fluffy.
- 4Fluff with fork and garnish with herbs. Serve with raita.
